I hope you get one! :) St. Patrick's Day Party Food St. Patrick's Day isn't a "big holiday" for a lot of people, but some of us like any excuse to make a day extra special. The fact that I'm 25% Irish gives me even more of an incentive to mark the occasion with a little quirky treat. Don't you think your kids or work mates would enjoy a little St. Patricks Day party food to perk up their day? It's SO easy! How many of us have enjoyed the old favorite Rice Krispie treats? I know it's one of my favorites. In fact, I can down a whole batch myself in 2 days flat. I shouldn't, but I know for a fact that I can. :) It's so easy to turn that old favorite into a fun new treat by simply adding some food coloring. Green Marshmallow Rice Krispie Treats for St. Patricks Day If you don't already have a rice krispies treats recipe, here's what you'll need: 1/4 cup of butter 1 package (10 ounces) of regular sized marshmallows or 4 cups of the mini ones Green Food Coloring 6 cups Rice Krispies (or off brand equivalent) Lightly butter the bottom and sides of a 9x13 pan. I like to use glass myself. In a large saucepan melt the butter and marshmallows on low heat. You can also use the microwave (for 3 minutes) if you prefer, but you've got to stir after each minute to be sure not to burn it. Once the marshmallows are completely melted, remove from heat and quickly stir in the food coloring. Add the cereal and stir until it is completely coated and then press it into the buttered dish to cool. Extra Tip: Instead of cutting them into squares, get a shamrock shaped cookie cutter and make shamrock shaped treats.
